ЁЯСитАНЁЯН│ Chef de Partie (CDP) тАУ Cold Kitchen

Responsibilities:

  • Prepare and present high-quality cold dishes, salads, and starters.

  • Ensure all food is produced in line with hygiene and HACCP standards.

  • Assist in menu development for cold kitchen items.

  • Supervise and guide junior staff in the section.

  • Monitor portion control and minimize wastage.


ЁЯН░ Chef de Partie (CDP) тАУ Pastry

Responsibilities:

  • Create, prepare, and decorate pastries, desserts, and baked goods.

  • Assist in designing new dessert concepts to enhance guest experiences.

  • Ensure consistent quality and presentation of pastry items.

  • Maintain cleanliness and organization in the pastry kitchen.

  • Support the training of pastry interns and junior chefs.


ЁЯФе Junior Sous Chef тАУ Hot Kitchen

Responsibilities:

  • Oversee daily operations of the hot kitchen.

  • Supervise cooking processes for main courses, sauces, and accompaniments.

  • Assist the Sous Chef and Executive Chef with menu planning.

  • Train and mentor team members in the hot kitchen.

  • Maintain stock levels and control food costs efficiently.

Responsibilities:

  • Gain hands-on experience in various resort operations (culinary, front office, F&B service, etc. depending on placement).

  • Assist senior team members with daily tasks.

  • Learn the fundamentals of hospitality management in a luxury resort setting.

  • Build strong communication and teamwork skills.

  • Contribute to maintaining BrenniaтАЩs genuine Maldivian hospitality standards.
